Tofu Scramble

Tofu Scramble is an egg-free, meat-free veggie scramble that makes a delicious, high-protein breakfast that will fill you up for hours! 

Ingredients:

- 1 serving firm organic tofu, pressed (usually 1/4 package)
- 2 tbsp. nutritional yeast
- handful fresh spinach
- 1/2 red pepper, chopped
- 1/2 yellow onion, chopped
- 1 tsp. coconut oil
- sea salt, turmeric, garlic powder, cayenne pepper (hot sauce-optional) 

Directions:

  1. Crumble tofu in a bowl and mix with nutritional yeast, sea salt, turmeric, garlic powder, & cayenne pepper. Blend together well with a fork and set aside. 
  2. Heat coconut oil over medium heat. Saute onions and red pepper. Add tofu mixture and cook until lightly browned. 
  3. Add spinach and toss. Cook a few more minutes until spinach begins to wilt. (do not overcook).
  4. Serve Ezekiel toast. Enjoy! 

You can use any other types of veggies you would like. I always change it up! This one I made with mushrooms, onions, and zucchini! 

Also optional- serve with tempeh bacon! It gets crispy just like real bacon, but tastes even better and is much better for you!
