Spinach and Feta Pasta
1 package penne pasta (whole grain, wheat or brown rice)
2 tablespoons coconut oil
3 cups chopped tomatoes
3-4 handfuls of fresh spinach, washed and chopped
2 cloves garlic, minced
8 ounces feta cheese (or dairy-free cheese like parmesan)
Sea salt and pepper to taste
Cook pasta according to package directions. Drain, and set aside.
Heat oil in a large skillet. Add tomatoes, spinach, and garlic; cook and stir a few minutes (until spinach is wilted and mixture is thoroughly heated). Add pasta and cheese; toss and cook 1-2 minutes. Season to taste with sea salt and pepper.
