Quinoa with coconut milk

1 cup Quinoa
1 can coconut milk
1 tbsp vanilla extract
1 ripe mashed banana
1 1/2 cup milk (or non-dairy milk)
walnuts and almonds
as desired
2 tbsp honey or agave
1 tsp cinammon

Directions: Rinse quinoa very well. Add to a pot: coconut milk, milk, vanilla extract and cinnamon then bring to a boil, add quinoa and mashed banana and honey or agave. Turn temperature down to medium for 10 to 15 minutes until quinoa is cooked. Finally, serve and add walnuts or almonds and enjoy this delicious recipe!

This sounds so delicious! I make a similar version with oatmeal, but will definitely try this with quinoa!
