Quinoa and Shrimp

1 lb. large shrimp, peeled and devined
1 cup quinoa
1 1/2 - 2 cups water
2 tbs. olive oil
1 onion, chopped
1 red pepper, chopped
1/2 cup mushrooms, sliced
6-8 asparagus spears, sliced 1"
1 tsp. ginger, minced
salt to taste
pepper to taste
2 tbs. lime juice
2 tbs. parsley, chopped

Rinse quinoa. In sauce pan, combine quinoa and water, bring to boil, then reduce heat to simmer until water is absorbed. Set aside. Saute onion and red pepper in olive oil, approximately 3-5 minutes. Add mushrooms, asparagus and ginger, cook until tender. Season to taste with salt and pepper. Add shrimp and cook until color of shrimp begins to change color and curls. Combine quinoa and shrimp mixture in a large bowl. Add lime juice and parsley and serve.
