Pistachio and Beet Salad

Salad Ingredients:

1 package of mixed field greens
1/2 cup of shelled pistachios chopped
5-8 medium sized steamed and prepared beets (can find in the grocery store pre-steamed with no preservatives or additives)
1 4 oz package of goat cheese crumbled


Vinaigrette Ingredients: (simplified version- Mix extra virgin olive oil, white balsamic, cracked pepper, and salt to taste)

Honey Dijon Balsamic Vinaigrette (from Allrecipes.com)
1/3 cup balsamic vinegar
1/2 cup olive oil
2 tablespoons Dijon mustard
1 tablespoon honey
salt and pepper to taste

Directions:
Place salad greens in a bowl and top with all other ingredients.

For the dressing:
Whisk balsamic vinegar, olive oil, mustard, honey, salt, and pepper in a bowl. Drizzle over salad! Enjoy!
