Pesto Vegetable Wrap

This is a healthy vegetable wrap recipe. I add pesto to this simple veggie wrap with for lunch or dinner. It is quick and easy to make!

I usually just use pesto leftover from the previous night. You can make this quick and healthy wrap in minutes. I add fresh arugula, but you could also use spinach or romaine lettuce, etc. Feel free to add any vegetables you prefer or happen to have on hand! Whatever is fresh and available will do!

Ingredients:

  • Ezekiel Sprouted whole grain wraps (or other whole grain wraps)
  • Fresh arugula (or spinach)
  • Red bell pepper
  • Cucumber
  • Onion
  • Black olives
  • sprouts
  • 2 tbsp. pesto

Directions:

  1. Clean and slice red pepper, onion, olives and cucumber.
  2. Spread pesto on wrap.
  3. Add arugula, then other vegetables. Top with sprouts. You can also drizzle with balsamic vinegar (optional).

Wrap it up! Enjoy!


I often make this at the same time a I make a pesto pasta or portobello pesto paninis . I wrap it and refrigerate to take with me to work the next day. It's easy to make when you already have many of the ingredients out from dinner. Then, you have a grab-and-go lunch all ready!
