Orzo and Spinach Salad

2 cups orzo
1 tbs. olive oil
1/2 cup olive oil
3 tbs. white wine vinegar
3 tbs. lemon juice
1 tsp. pepper (fresh ground)
1 tsp, Dijon mustard
1 clove garlic, minced
pinch of thyme
1/2 tsp. oregano (dried)
1/4 tsp. ground cumin
3 oz. fresh spinach, torn into bite size pieces
1 red bell pepper, chopped
1/2 cup kalamata olives, pitted and slivered
1/2 cup scallions, minced
2 tsp. capers
3 tbs. crumbled feta cheese (more if desired)
3 tbs, pine nuts

Cook orzo until al dente. Rinse (cold water) and drain. Toss with 1 tbs. olive oil. Next make dressing by mixing 1/2 cup olive oil, vinegar, lemon juice, pepper, mustard, garlic, thyme, oregano and cumin; mix until smooth. Toss with orzo. Add spinach, bell pepper, olives, scallions and capers. Salad now can be refrigerated several hours. When serving, add feta cheese and pine nuts. Serves 6-8.

I am always being asked to make something for family gatherings and I spend a lot of time (and money) looking for recipes and buying all sorts of ingredients I don't normally have at home. This seems like a really easy recipe to make the night before and serve as a side dish at a summer BBQ... And I already have all the ingredients. Can't wait to try it!
