Creamy Cauliflower Mash

Creamy cauliflower mash is a simple, healthy alternative mashed potato recipe. They are simply delicious! You can make them creamier by processing them a little longer. You can also change it up a bit by adding roasted garlic (or garlic powder), or dill or chives.

I add Nutritional Yeast to give it a nutty/cheesy flavor. (No, it is not the yeast used to make beer or bread). It is high in protein and contains all of the essential amino acids our body needs. I add it to everything, including soups, pasta, dressings, and pesto to name a few! It makes sauces creamy and "cheesy"!

Ingredients:

  • 1 head of cauliflower
  • 1/4 cup almond milk (or soy, coconut, etc.)
  • 1/2 cup Nutritional Yeast
  • 1 tbsp. Earth's Balance
  • 1 tsp. turmeric
  • Sea salt and pepper to taste
  • (Optional)- add dill or roasted garlic

Directions:

  1. Steam cauliflower.
  2. Add to blender with remaining ingredients and pulse a few times to reach your desired consistency. If using a Vitamix, use variable 2 or 3 (do not over blend or you will have Cauliflower Soup!)
  3. Serve and enjoy!

I put cauliflower in steamer basket and cover. Steam until slightly soft, but do not overcook!
