Don't pass on buying a squash the next time you are shopping because it seems too difficult to prepare. It's really quite easy and it cooks fairly quickly if you chop it into small cubes!
Step 1- Start by slicing off both ends of the squash. You will need a large, sharp knife!
Step 2- Then, slice the squash in half width-wise.
Step 3- Next, slice the larger bottom piece in half length-wise. Scoop out the seeds and pulp. (You can rinse and reserve the seeds for roasting!)
Step 4 - Then, use a peeler or paring knife to remove the outer layer of skin.
Step 5- Finally, you can either add squash to an lightly oiled baking dish, or drizzle squash with oilive oil and seasonings of your choice (depending on the recipe). Cover and bake squash at 375F for about 30 min.
Here, I tossed it with cinnamon, nutmeg, a dash of cayenne pepper and sea salt for this Quinoa Salad with Cranberries.
Remove squash from oven when cooked through. The squash should still be slightly firm, but not mushy. You can check it by piercing it with a fork. You can eat it as is, or mash the squash with a little Earth Balance buttery spread and almond milk for a delicious side dish.
