Coconut Raisin Cookies

This recipe is based on my favorite crackers, “N’Oatmeal” Raisin Love Cookies by Mary's Gone Crackers. They are so delicious I wanted to try to make them on my own. Here is the closest I got!

2 1/2 cups quinoa flakes
3/4 cup ground flax seed
1 1/2 tsp Ener-G Egg Replacer plus 2 tbsp water
1 tsp cinnamon
1/4 cup Earth Balance, melted
1/2 cup agave
1 tsp vanilla
1 mashed bananas
1 cup raisins
1 cup shredded coconut

Preheat oven to 350.
Mix all ingredients except the raisins and coconut with fork until all flakes have been blended in.
Add raisins and coconut and mix again.
Drop by tablespoons on well greased cookie sheet (or parchment paper lined).
Bake 15 to 18 minutes until slightly golden brown on top.
