Butternut Squash Quinoa salad is a sweet and spicy dish with cranberries and toasted pumpkin seeds. This is a simple, healthy Thanksgiving side dish!

This recipe has the flavors of fall with sweet cranberries, toasted pumpkin seeds, roasted butternut squash with cinnamon & nutmeg!

It is a quick and easy recipe to make! Butternut squash is in season. Did you get one and aren't quite sure how to cook it? Follow these steps to peel and cook butternut squash. Try it in this delicious cranberry quinoa salad. It can be served warm or cold!

Ingredients:

  • 2 cups quinoa (4 cups water)
  • 1 medium sized butternut squash
  • 1 cup dried cranberries
  • 3/4 cup toasted pumpkin seeds
  • 1/2 cup chopped green onions
  • 3/4 cup orange maple cinnamon dressing
  • 1 tsp. cinnamon, 1/4 tsp. nutmeg, dash of cayenne pepper (optional)

Directions:

  1. Prepare butternut squash. Peel, chop into small cubes. Drizzle with olive oil and cinnamon & nutmeg. Bake at 350F for about 25 min.
  2. Rinse quinoa. Add to pot and sprinkle with cinnamon, nutmeg, & cayenne. Stir over medium heat to lightly toast. Then add water and bring to a boil. Reduce heat to low. Cover and simmer for about 15 min. or until all water is absorbed.
  3. Dry-fry pumpkin seeds in a skillet over medium heat with a little sea salt. Turn often so they don't burn.
  4. Add quinoa to a large bowl. Toss with orange maple cinnamon dressing.
  5. Stir in remaining ingredients. Fold in squash. Top with additional pumpkin seeds and green onions before serving (optional). Serve and enjoy!

Add spices to quinoa before boiling. Stir and lightly toast over medium heat. This will enhance the flavor!

Prepare butternut squash. Roast covered for about 25 min. Do not over cook. It should still be slightly firm, not mushy!

Toast pumpkin seeds over medium heat until lightly browned.

Prepare the orange maple dressing and chop the onions.

Add quinoa to a large bowl and pour in the orange maple dressing. Toss to coat.

Toss it all together until well combined.

Fold in the squash. Lightly toss it together, careful not to mash the squash.

Top with a few more pumpkin seeds and green onions before serving. This is delicious as a warm quinoa cranberry salad or it can also be served cold. It would make a delicious, healthy Thanksgiving side dish!
