Black Bean Tacos

Saute together, until fully cooked:
1 large onion, diced finely,
1 8-12 ounce box of mushrooms, diced very finely, (optional)
couple cloves of fresh garlic, chopped, or use garlic powder

Add: Several cups of soaked and cooked black beans or 1-2 cans of black beans, drained, heat fully,

Grate several carrots and a couple small zucchini's and stir into bean mixture. Turn off heat, I do not cook this, I just let the heat from the bean mixture warm the veggies.

Season with taco seasoning or just a little sea salt, pepper, garlic powder, and chili powder, what ever seasonings you like best.

Heat corn tortillas (we like the King size ones)on a hot frying pan or fry in cococnut oil until crisp, folding into taco shape.

Put a large spoonful of bean mixture into tortilla and top with diced tomatoes, chopped romaine lettuce, salsa, and whatever other taco toppings you choose. I don't eat dairy so choose not to put cheese and sour cream and they still taste great. :)

These are easy to make and very tasty, even my non-vegan family and friends love them.

These were one of the 1st Vegan dishes I made and my hubby and grandkids all loved them, the kids didn't even realize there was no meat or cheese, I think they thought the shredded carrots was cheese, and the finely chopped mushrooms kind of give it a meaty texture. :)
