Veggie Hummus Wrap

This is a quick and easy wrap with mediterranean vegetables and hummus. It is healthy and delicious! It can easily become dinner by making it a panini and serving it with sweet potato fries.

Ingredients: Use organic ingredients whenever possible!

  • 1 package burrito-size wraps (Ezekiel or other whole grain wrap)
  • Hummus (about 1 tbsp. per wrap)
  • 1 red pepper, sliced (or roasted red peppers from a jar)
  • 1 zucchini sliced
  • 1/2 yellow onion, sliced
  • 2 large portobello mushrooms; cleaned and sliced
  • 10-12 pitted black or kalamata olives, chopped
  • Fresh spinach (small handful per wrap)
  • Daiya Mozzarella Cheese (optional)
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • Sea salt to taste
  • Directions:

    1. Wash and slice the vegetables. Place them in a large bowl, toss with balsamic vinegar and a pinch of sea salt.
    2. Heat olive oil over medium heat. Lightly saute pepper, onion, mushrooms, and zucchini (they should still be slightly firm).
    3. Spread about 1 tbsp. of hummus on each wrap. Then, layer with a small handful of fresh spinach.
    4. Next, add a couple spoonfuls of the veggie mixture. Make sure to drain off excess liquid so the wraps are not soggy. Top with chopped olives and sprinkle with Daiya cheese (optional if you want to make them into a panini).
    5. Wrap it up and enjoy as is, or you can place the wrap on a panini press for a few seconds to melt the cheese. If you don't have a panini press, you can place it back into the pan and lightly brown each side.

    *This should make up to 8 wraps.




    * This is a healthy and delicious mediterranean style veggie wrap! You can refrigerate the cooked veggies and use them to make quick wraps for lunch throughout the week. I often make a large batch of hummus on the weekend (or you can buy hummus). I do not add the cheese unless I'm making them as a panini for dinner. You do not need cheese for a wrap, the hummus really holds them together nicely!

    *You can also add any other veggies that you like. I've tried several variations and this is my favorite so far! Other options that would be delicious in this wrap are artichokes and sun-dried tomatoes.
