Healthy Vegetarian Chili

This healthy vegetarian chili with three beans and tempeh is a delicious alternative to traditional chili. Add tempeh for additional protein and top with avocado for creamy, healthy good-for-you fat instead of sour cream. It will warm you head to toe! This three bean chili recipe is so tasty and filling. It is perfect for fall and winter months!

Ingredients: Use organic ingredients whenever possible!

  • 1 green pepper, chopped
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 package organic tempeh (optional)
  • 1 can black beans
  • 1 can kidney beans
  • 1 can pinto beans
  • 1-2 cans diced tomatoes (no salt added)
  • 1 small can tomato paste
  • 2 tsp coconut oil or (olive oil or canola oil)
  • 1-2 tbsp chili powder
  • 1/4 tsp. cayenne pepper (add more or less depending on how spicy you like it).
  • 1 tsp. garlic salt or Sea salt
  • 1 tsp ground cumin powder
  • 1/2 tsp. cinnamon
  • 1 cup water or (low-sodium vegetable stock)
  • 1 avocado
  • Directions:

    1. Wash the pepper thoroughly. Chop pepper, onion, and garlic. Heat 1 teaspoon of oil in a large pot. Add pepper, onion, and garlic. Add chili powder, cayenne, salt, cumin, and cinnamon. Saute on medium-low until slightly soft, but not overcooked.
    2. Drain and rinse the beans. Set aside.
    3. Add tomato paste and water (or stock) to the peppers and onions. Stir until paste is dissolved. Then, stir in the diced tomatoes and beans.
    4. In another pan, lightly saute crumbled tempeh in a teaspoon of coconut oil over medium-low heat (optional). When cooked, stir into the chili. Then, simmer on low for about 20 min.
    5. Transfer chili into bowls, top with diced avocado and onion, serve and Enjoy!

    *You can also add any other veggies, like green beans or corn, to this veggie chili! This can easily serve 6. You could also double the recipe so you have plenty of leftovers. I love vegetarian chili because it tastes even better reheated the next day
