Easy Creamy Cauliflower Soup

Easy Creamy Cauliflower soup is delicious and detoxifying! This easy healthy recipe is perfect for a Fall Detox! It contains onions, roasted garlic and cauliflower, which are all known to help aid the body in detoxification. You will lick the bowl clean, I promise!

Cauliflower should be one of the cruciferous vegetables you eat on a regular basis! There are numerous studies linking cauliflower-containing diets to cancer prevention. Ingredients: Use organic ingredients whenever possible!

  • 1 head organic cauliflower, chopped
  • 1 yellow onion, chopped
  • 1 bunch of garlic
  • 1 potato
  • 3 cups organic low-sodium vegetable broth
  • 1 cup organic almond milk (or other non-dairy milk; such as coconut milk, etc.)
  • 2 tablespoons Earth Balance non-dairy butter spread
  • 1 tablespoon coconut oil
  • 3-4 green onions, diced
  • 1 teaspoon tumeric powder
  • 1 teaspoon cayenne pepper (optional- if you want a "little Kick" to it)
  • Sea salt (or garlic salt) to taste

Directions:

  1. Slice the tops off a bunch of garlic to expose the cloves. Drizzle with olive oil. Wrap in foil and roast in oven for 25 min.
  2. Chop and rinse the cauliflower.
  3. Wash the potato and chop into small pieces. Chop the onion. Melt coconut oil in a large pot over medium heat. Add onion and potatoes. Add the turmeric and sea salt or garlic salt, stirring frequently to prevent burning. Add the cauliflower and stir again. Put the lid on and allow to cook for about 3min.
  4. Add 3 cups of vegetable broth. Bring to a boil, then reduce heat to low. Let simmer until cauliflower is slightly soft, but not overcooked (about 10-12 min.) Stir in 1 cup almond milk. Continue to simmer for about 3-5 min.Remove the garlic from the oven and let cool a few min.
  5. Transfer cauliflower mixture to a blender or large food processor (leave 1 cup of the cooked cauliflower aside). Add the Earth Balance. Blend on low, then slowly increase speed to high until mixture becomes a smooth, creamy consistency. Remove roasted garlic cloves from peels completely and add to blender. Blend again on medium-high for about 1 min.
  6. Pour the mixture into serving bowls. Add a few spoonfuls of cooked cauliflower pieces to each bowl. Top with diced green onions, serve, and enjoy!

* This recipe is super easy to make and doesn't require a lot of ingredients! Cauliflower, garlic, onions, turmeric, and cayenne all have detoxifying properties and help to remove toxins from the body. This soup is super creamy without using dairy. Nut milks and coconut milk are healthy alternative to cow's milk and give soups a nice smooth consistency. The roasted garlic gives the soup an added boost of flavor! The tumeric gives it a nice orange color and makes it seem cheesy, but it's not! Enjoy this soup during the cool fall months, especially if you are trying to detox and remove toxins from your body!
