Cheesy Quinoa Casserole

Cheesy Quinoa Casserole: This gluten-free casserole is ooey-gooey good! This is a delicious, dairy-free recipe with a twist. Try this healthy casserole with mushrooms, peas, onions for dinner tonight. It is sure to please everyone! Quinoa is a healthy, high protein grain that is a perfect substitute for rice or pasta in any casserole recipe!

Ingredients: Use organic ingredients whenever possible!

  • 2 cups cooked quinoa
  • 1 package portobello (or button) mushrooms, cleaned and sliced
  • 1 yellow onion, chopped
  • 1 cup green peas, thawed if frozen or blanched
  • 1 tsp. coconut oil
  • 1 cup dairy-free cheese sauce

    Directions:

    1. Cook quinoa according to package. 2 cups quinoa, 4 cups water. Bring to a boil and simmer on low covered for about 15 min. or until tender.
    2. Heat coconut oil over medium-low heat. Lightly saute the mushrooms and onions. Do not overcook.
    3. Thaw or blanch peas. Add peas to mushrooms and onions and toss together in pan.
    4. Add cooked quinoa, the mushroom, onion, pea mixture and cheese sauce to a lightly greased casserole dish. Stir until thoroughly mixed together.
    5. Bake covered at 350' for about 15 min. Remove cover and bake an additional 5-10 min. Serve and enjoy!








    6. You could use broccoli instead of peas for a more traditional broccoli and cheese casserole. Another tip is to make extra cheese sauce. It is a perfect dairy-free sauce to add to other veggies, or dishes throughout the week. It also makes a great dipping sauce for crackers or tortilla chips!
