Baked Kale Chips

Baked Kale Chips are super easy to make. They are a healthy alternative to potato chips and have lots of vitamins, calcium and protein! I couldn't believe how delicious and crispy they are. Kale is a super food! Kale may not look appetizing, but give it a try, you may be surprised! I usually add it to smoothies, soups, and salads, but these kale chips make a delicious, healthy snack!

Ingredients:

  • 1 bunch organic kale (I used Lacinato or “Dinosaur” Kale, but you can use the curly kale too)
  • 1 Tablespoon extra virgin olive oil
  • Sea salt or garlic salt (you could also add cayenne pepper, cumin, or chili powder-whatever seasonings you like!).
  • Directions:

    1. Preheat oven to 300°F. Rinse and dry the kale thoroughly.
    2. Remove the stems and center ribs.
    3. Tear into large pieces, toss with olive oil in a bowl then sprinkle with garlic salt (and any other seasonings you are using). Massage the oil and seasonings into the kale with your fingers. Give love to the kale- it brings out it's magnificent flavor and makes it less bitter!
    4. Arrange leaves in a single layer on a large baking sheet (You can line them with parchment paper or foil for easy clean-up). Do not overcrowd the kale pieces. Bake for about 15 minutes, or until crisp. Be careful not to burn them!
    5. Allow them to cool for a few minutes and Enjoy!

      This recipe is super easy to make. They're terrific alone as a healthy snack or crumbled as a topping for popcorn! I love potato chips. Chips and fries are my weakness. I was so happy to discover that these baked kale chips satisfied my cravings. I will be making them weekly! I will add chili powder, cumin and nutritional yeast to my next batch of kale chips.
